DIY Tortilla Press: Make Authentic Corn Tortillas at Home
“Mexican food without corn tortillas is like Chinese food without rice…” Rick Bayless aptly describes the importance of corn tortillas in Mexican cuisine. While many north of the border may opt for other options, experiencing a freshly made corn tortilla is a game-changer. These tortillas are at their absolute best only for a few hours after they’re made. Savoring the taste of freshly made corn tortillas is an experience you don’t want to miss.

I embarked on a mission to find a tortilla press, a tortilladora, in my neighborhood’s Latin-American food markets. After searching several stores, I finally located one. However, the quality left much to be desired. The press was made from roughly sawn, low-grade pine, held together by black drywall screws that protruded dangerously. The price? $24 USD. Despite the charming “HECHO EN MEXICO” sticker, I knew I could do better.
While I appreciate supporting local Latino markets, I decided to create my own tortilla press. The total cost came out to just $10.50 USD, and the project took about an hour, plus glue drying time.
Even if you don’t want to build your own press, I highly recommend purchasing one. Making your own fresh corn tortillas is a simple pleasure that will forever change your perception of pre-packaged taco shells.
Why Make Your Own Corn Tortillas?
Once you’ve tasted a freshly made corn tortilla, you’ll never go back to the store-bought variety. The difference is undeniable. Homemade tortillas have a superior texture, a more vibrant corn flavor, and a delightful aroma that fills your kitchen. They are also incredibly versatile, perfect for tacos, quesadillas, enchiladas, or simply enjoyed on their own with a pat of butter.
Making your own corn tortillas is also a great way to connect with Mexican culture and tradition. It’s a simple skill that can be passed down through generations, and it’s a rewarding experience that will bring joy to your family and friends.
Materials and Tools for Your DIY Tortilla Press
Here’s what you’ll need to build your own tortilla press:
- 1” x 10” x 3’ Select Grade Pine Board
- 1” wood dowel
- 1/4” Carriage Bolt, 1 3/4” length
- 1/4” Wingnut
- 1 1/2” Pin Hinge (x2) and accompanying screws
- Saw (Miter Saw, Circular Saw, Large Miter Box, Hacksaw, or traditional cross-cut saw)
- Electric Drill and 1/4” drill bit
- Wood Clamps
- Mineral Oil
Step-by-Step Instructions: Building Your Tortilla Press
Follow these steps to create your own tortilla press:
- Cut the Wood: Cut your 1”x10” pine board to the following lengths:
- 11 1/4 ‘ (A)
- 9 5/8” (B)
- 1 1/2” (C)
- 3/4” (D)
- 2 1/4” x 1” (x2) (E)
Most lumber yards and hardware stores will cut the wood for you.
- Cut the Dowel: Cut your 1” dowel down to a 9” piece.

- Assemble the Base and Top: Glue and clamp C to A, aligning the edges. This will be the base of the press. Then, glue and clamp D to B, aligning the edges. This piece will serve as the top, with the thin piece D interacting with the arm to create squeezing pressure.
- Create the Arm: Place the small pieces E on either side of the dowel. Clamp this unit together for stability. Drill a 1/4” hole approximately 3/4” from the top of the E pieces, widening the hole slightly. Insert the bolt and secure it with the wingnut.
- Sand and Oil: Sand each piece with 100, 150, and then 220 grit sandpaper. Pine is soft, so be gentle. Rub each piece with a thin coat of mineral oil. Mineral oil is food-safe and won’t go rancid. You can find it at your local drugstore.
- Attach the Top and Base: Attach the top and base with the hinges at the short side (opposite of glued blocks B and D). Insert a piece of thick card or a thin washer between the layers to create a small gap, preventing the tortillas from becoming too thin.

- Glue the Arm: Glue the arm to the tall side of the base (pieces A and C) so that the dowel hangs over the attached top.

Chris’ Tortilla Recipe: From Dough to Deliciousness
If you live in a city with a large Chicano population, you might be able to purchase fresh masa dough from a Latin market or tortilla factory. If so, take advantage of this shortcut.
Otherwise, here’s a recipe to make your own masa from scratch:
Ingredients:
- 2 cups Masa Harina (such as Maseca brand)
- 1 1/4 cups hot water
- A hefty pinch of salt
Instructions:
- Mix the Dough: In a bowl, combine the Masa Harina, hot water, and salt. Use your hands to mix until the dough is soft and pliable, similar to Play-Doh, but not sticky like cookie batter. If necessary, add a little more water or Masa Harina.
- Rest the Dough: Let the dough rest while you preheat a griddle or two skillets. Preheat one side/skillet to medium (400°F) and the other to medium-low (300°F).
- Divide the Dough: Divide the dough into golf-sized balls (about 15-17). Cover them with a damp cloth to prevent them from drying out.
- Press the Tortillas: Cut a large zip-top bag along the sides, removing the zipper to create a long sheet of thick plastic. Place the plastic on the bottom of the press. Place one dough ball slightly off-center, towards the hinge. Lay the other half of the plastic on top, and close the lid. Press the handle firmly to form a tortilla about 5-6” in diameter.
- Peel and Flip: Open the press and peel off the top sheet of plastic. Flip the tortilla onto your palm so that the dough is touching your skin. Carefully remove the rest of the plastic (this may take practice).
- Cook the Tortillas: At the griddle, gently transfer the tortilla from your hand to the cooler surface. Cook for about 30 seconds, or until the tortilla releases easily from the surface. The edges may look a little dry. Flip the tortilla to the hotter surface and cook for 40-60 seconds. You’ll see some steam, and the bottom will develop brown spots from the corn. Flip again and cook for another 40-60 seconds, during which the tortilla will begin to puff up.
- Keep Warm: Stack the cooked tortillas in a towel-lined bowl or basket. This traps the steam and keeps them moist and warm.
Enjoy Your Homemade Tortillas!
Wrap your homemade tortillas around your favorite filling (hopefully, not ground beef with “taco” seasoning!). Enjoy the authentic flavor and satisfaction of making your own delicious corn tortillas. You’ll never settle for store-bought again!
Tips for Perfect Homemade Tortillas
- Use High-Quality Masa Harina: The quality of your Masa Harina will significantly impact the flavor and texture of your tortillas. Look for reputable brands like Maseca or Bob’s Red Mill.
- Don’t Overwork the Dough: Overmixing the dough can result in tough tortillas. Mix until just combined and allow it to rest.
- Adjust Water as Needed: The amount of water needed may vary depending on the humidity and the brand of Masa Harina. Add water gradually until the dough reaches the desired consistency.
- Use a Hot Griddle: A hot griddle is essential for cooking the tortillas evenly and achieving a slightly charred flavor.
- Don’t Be Afraid to Experiment: Once you’ve mastered the basic recipe, feel free to experiment with different variations, such as adding herbs, spices, or even cheese to the dough.
Beyond Tacos: Creative Ways to Use Your Homemade Tortillas

- Tostadas: Bake or fry tortillas until crispy and top them with beans, meat, vegetables, and salsa.
- Sopes: Form small, thick tortillas and fry them until golden brown. Top with your favorite toppings for a delicious appetizer.
